One look at the 12-foot-long open fire mesquite grill, where flames roast the myriad of meats standing tall on metal poles around the rim, and you understand why chef Johnny Hernandez named his latest restaurant, El Machito. “It means little tough guy, as in takes a little tough guy to cook over this fire,” says the gregarious chef, greeting diners on the patio when he’s in dire need of a break from the heat. It took Hernandez 6 weeks to master the art of cooking over his handcrafted asadero, the massive iron grill that was created by metalworkers in Guadalajara. Chicken needed to be near the higher flames, shrimp as far away as possible, beef and pork ready for a slow roast. The chef’s signature dish is cabrito, milk-fed baby goat that is sourced locally at a farm in Utopia, Texas. The chance to savor this one traditional northern Mexican meat has quickly made Hernandez’ latest San Antonio restaurant a must-stop for folks craving a Jalisco-style parrillada or barbecue.
Dominica’s volcanoes might be dormant yet there’s still fire in the belly of this island. The Valley of Desolation was just one of the highlights on a 7-hour round-trip hike inside Morne Trois Pitons National Park. Our guide, Kent, led my friend and me over muddy trails through a dense forest of tall gommier trees, used to make dugout canoes for 20 to 30 paddlers, and past the massive trunks of the banyan-like chatagnier trees, some more than 300 years old. As we made our ascent out of the darkness of the rainforest canopy, purple-throated hummingbirds kept us company as they stuck their heads into the tubular red heliconia flowers.

Exhausted from far too many 5 am wake-up calls, 90-minute drives in and out of Quito to the airport, and long longboat rides in the Amazon, my family was in poor spirits when we arrived in the Galapagos Islands for the last segment of our summer trip to Ecuador. But it’s amazing how a motorboat cruise on the ocean and all that water can wash away the toxins of travel. Listening to our iPods and watching the dolphins and orcas swim beside us, we were relaxed by the time we reached the sea lions lounging on the docks of Floreana. A driver brought us to our lodging for the next two nights, Floreana Lava Lodge, simple wooden cabins on the beach with the sound of pounding waves to lull you to sleep. The owners, a brother and sister team of Claudio and Aura, were two of 12 siblings that were brought up on the island. Their father and mother moved to Floreana in 1939 and today there are only 150 full-time residents.
Five hours west of Washington, DC, in the heart of West Virginia, families go whitewater rafting on West Virginia’s New River. Bordered on both shores by lush oak, hickory, and black cherry trees, this Class III-IV waterway cuts through a gorge of sandstone, shale, and coal, bumping into rapids with names like Surprise and Greyhound Bus Stopper. Minimum age is 10 years old. The truly intrepid rafter should take their chances on West Virginia’s Upper Gauley. This adrenaline-pumping Class V run drops 650 feet over a twenty-seven mile course. Located in Beckley, West Virginia, on the New River Gorge, Class VI-Mountain River has been taking shrieking families down the rivers of West Virginia since 1978. They also offer canopy tours and lodging in cabins.
In 1990, I left my job as an insurance broker in Manhattan, booked an open-ended ticket to the South Pacific, New Zealand, and Australia, and wrote my first travel story, “Dining with the Descendants of Cannibals on a Fijian Island” for the Miami Herald. It would prove to be start of a career where I would write more than 1500 stories (over 300 articles for the Boston Globe alone) and visit over 90 countries. Then the recession hit. I lost more than half my editors in 2008-2009 as magazines folded and newspapers either eliminated or greatly reduced their travel sections. Wanting to utilize my travel expertise, I convinced Lisa to join me in a business venture and become an accredited travel agent.
